Healthy unsaturated fatty acids in Pata Negra pigs that ate a diet of acorns reach 75% – making it the most “cardiohealthy” of all animal fats. The fat contains over 55% oleic acid (similar to olives) which is linked to lowering bad cholesterol and to the reduction in the risk of coronary heart disease.
Spanish acorn-fed pigs live like kings compared to mass production pigs. While an acorn-fed Iberico black pig has a roaming space of 30000 square meters each (eating acorns, mushrooms, pasture, roots), regular mass production pigs have 0.3 to 0.75 square meters of space (not enough to stretch, turn around or to reach a state of deep sleep).
